Uses, Applications and Advantages using Xanthan Gum

Xanthan Gum is a high molecular weight exocellular polysaccharide derived from the bacterium
Xanthomonas campestris using a natural, aerobic fermentation process

It is a very versatile plant-based rheological modifier (thickening agent) and stabilizing agent, and an often used food additive.

USES OF XANTHAN GUM

Xanthan gum works as an emulsifier, encouraging liquids that normally don’t like one another to mix as well as a thickener, increasing the viscosity of liquids and batters. It is used in a variety of industries and applications from water treatment to food uses.

It increases viscosity, helps stabilize emulsions, and prevents separation and settling of solids in all kinds of consumer products like food, as well as in commercial and industrial applications.

In foods Xanthan gum helps create a creamy texture in goods like ice cream and salad dressings.  It is often used as the go-to thickener in gluten free baking too.

In commerical and industrial applications you will find xanthan gum used to modify many water based systems used in oil and gas, wastewater. It is used in the oil/ gas industry as a viscosifier for different applications due to its unique rheological properties.

In drilling fluids specifically, xanthan gum is used to thicken in order to carry the drilling fines to the surface, and to form a mud cake to increase the stability of the good wall, and also to establish a liquid column pressure that balances the formation pressure.

In the fraccing industry xanthan gum is sometimes used as a thickening agent for water-based fracturing fluids and reduces friction.
